Wampee 黃皮

Sharing below is a piece about wampee, a fruit indigenous to the Canton region. I dug it up from the food columns I once farmed in a local papers called Ming Pao. It was the debut from a series of Chinese food article that appears on the lifestyle section of the papers every Sunday, dating almost 2 years ago.

Unfortunately this part-time food columnist career of mine didn't last long. For one it's fairly draining to write on the upwards of 2,000 words every week outside a full-time job (umh, and keeping up this blog too) -- for the 2 months I wrote, I sleep less than 4 hours a day, at times 3 only -- I breathed and walked thinking about the deadline and the proses of my own work. More importantly, the editor was really getting on my nerves for various reasons that I'm too gentleman to mention here, or anywhere. So our marriage ended right after I did the interview with Nigella Lawson the kitchen diva.

Still, it's a very rewarding ride. It doesn't matter I didn't charge a single penny for the columns all way through because for me it's about the experience and knowing the very fact that I can impart wisdom, I can pass on the torch of knowledge about Chinese food to someone who doesn't know. Reading my own writings, in a larger than life full page on the newspapers no less, just gives me a feeling of power transfusion because I know I'm sharing the glories of Chinese food culture that I'm so proud of.

   夏天來,一貶眼就已過 “大暑” 。 最近在新聞報導裡,經常看到有人在登山的時候,不小心中暑。一邊想到烈日高空,在山頭野嶺給毒太陽狠狠的壓住,必是熱得要命; 一邊又不然想起,這種天氣,正是黃皮當造的時候。

   看見黃皮,總會勾起童年的快樂回憶。小時候住在新界鄉下,下課後最喜歡就是一大幫人聯群結隊的跑到山後面的溪澗裡通山跑。一看到果樹,大家就會停下來,指指點點。看那個小孩最先按捺不住要逞威風 ,也不管果樹是野生的還是有私家的,「攀花折柳」的把熟透了果子弄到手。那時候的新界,民風還是挺野的。很多人家還留有自己種水果自己吃的習慣。反倒是在山溪裡,頭一回嚐到了大樹菠蘿,番石榴和黃皮。

   也是從那時候開始,就愛上黃皮。想想看,在山峻路顛之間,手無寸鐵的情況下,要把一枚大樹菠蘿瓣開,必是一件使大家都手忙腳亂,抓頭不是尾的勞役。你拿條門匙,我搬塊石頭,弄弄這個不好,動動那個不妥。最後滿頭大汗,好不容易成事,把果肉瓜分了,總會熱鬧得不亦樂乎。番石榴呢,也好不了多少。別以為一口咬下去就可以了事,野生的番石榴,看上去拼脆碧綠,怪可愛的。可沒下農藥,也沒人照理,免不了多躲了一兩條小果蛆。吃的時候就非得來得個斯文,一小口的啃,一小口的咬,看到了小蚜蟲就得使點勁兒把它擠去來,摔走。真的不小心喫上了一口小蟲,得飛奔跑去溪邊猛往口裡灌水,惡心得難過。惟獨黃皮最簡便。一枚黃皮,把皮一撥,往嘴裡一塞,再把核一吐,好吃又過癮。一大串一大串的摘下來,大伙兒總是風捲殘雲,吃得舔嘴咂舌,無不稱秒。

   也是打從哪時候開始,才曉得什麼叫「黃皮樹了哥 ﹣唔熟唔食」。小孩們堆裡的老人精總會站出來,拿著一串串的黃皮,指手畫腳的解說。哪一串黃是黃,可是還是有點兒青,不夠熟 ﹣千萬別動,否則吃下去會酸得你擠眉弄眼 ﹣「包保酸到阿媽都唔認得」云云;傍邊的哪一串就長得剛剛好,金黃偏古銅。來,大家得趁機趕快吃。

   同是嶺南佳果,名菜裡倒是很少聽說有人用黃皮入饌的,荔枝和龍眼卻很多。有回忽然心血來潮,想到用鮮黃皮配豬頸肉來炒。一下鍋,才發現黃皮很不耐熱,在火上翻幾翻就已經糊成一團。結果,香、味俱在,色卻蕭然。懊惱地把吃剩的分配給小狗,卻見它嗍得吱吱有味,也怪。後來聽朋友說,才知道新鮮上好的黃皮主要是生食的。次等貨會拿來做黃皮豉,用鹽糖醃製,加點川貝末,醃好了以後拿來泡茶喝,很有化痰、止咳和生津的功效。有趟跟朋友回大陸遠足,在村子裡的一家小茶檔吃飯,老板娘就是用這種黃皮泡茶來招呼大伙。喝下去先是有股淡淡的酸苦味,立刻讓人感到它生津解渴的妙用,再沒過多久又會覺得喉嚨甘涼,像有條涼氣直達心腹,簡直是餘味無窮。

   除此,查書又見有鮮黃皮燉湯的做法。加鷓鴣,桔梗,老火燉,就成一道又鮮香,又正氣的老火燉清湯,化痰止咳。

   有說以黃皮作食療,假如想收效顯著,須將果肉、果皮和果核整個放進口中慢慢嚼碎,連渣帶汁吞。據稱如此不但可以順氣降痰,消除胸腹翳滯,還可以預防中暑。不過像這種吃法,吃之前得處理乾淨:前不久閱報,見大陸某地有個女孩,也是把依樣畫葫蘆,結果因為哪家黃皮的農藥本身下得重,殘留在果實上的,又沒洗乾淨,中毒感染,把自己吃成個“大豬嘴”了,要勞煩醫生打上好幾針抗生素,才能消腫。

   中國的文人雅士特別喜歡談吃,寫吃。寫生果的文章也多不勝數,偏是關於黃皮的記載卻少得可憐。其一可能是因為它是嶺南特產,北方的大文豪很多連聽都沒聽說過。二來,可怪黃皮沒有起上個好名字,想雅也雅不起來。像香蕉、荔枝、龍眼、葡萄、鳳梨、水蜜桃,哪個不給它強,不是一聽就能使人垂涎欲滴?黃皮,這名子一聽就教人覺得俗,給人一種很「村」的感覺。好像姓李的老爹幫兒子姑娘起個名字叫李麻子一樣,勉為其難的幫它寫首詩嗎,讀起來就連一丁兒秀氣的感覺也無。其三,可能如《嶺南雜記》中道:「黃皮果大如龍眼,又名黃彈,皮黃白有微毛,瓤白如豬脂… 夏末結果… 此果當時多數野生在山野間。」﹣原來黃皮是個野種,怪不得一直都沒有被詩人們重視。

   可話說回來,在本地找黃皮吃卻是越來越難。供應期短,貨源少。跟龍眼、荔枝比,很有種曇花一現的感覺。有一會逛街市的時候看到過有些從泰國運來的黃皮賣,買了些,回去一嚐,乾癟。還是本地的雞心黃皮好吃。有個性,甜中帶酸。一顆顆尖尖的,像極了咱們本地某位大美人的瓜子兒臉。

   以前樓下有位老婆婆,總是把自己從村子裡摘下來的黃皮,拿到菜場附近賣。寒著的小身子總是倚在石礜沿邊上,低著頭,瞅著自己的大蕉和黃皮。老小老小,總是愛找人聊天。可記性不好,跟她買過幾次黃皮,還是沒能把我記住。每次見面總是問:「先生,你喜歡不喜歡吃黃皮?」還沒來得及接口說喜歡,她就已經笑住說:「一串五塊錢,你給我十五塊錢吧,我就把這裡統統賣給你。喜歡就要趁早啦,要不然再過幾天就“收水”啦(農家語:都摘光了的意思),到時候才曉得弄來吃就太晚啦,弄得自己個饞癆啊」。呀,說得也是,新鮮當造的黃皮,此時不吃,更待何時?
