Food: If you've lived in Hong Kong long enough, you'll agree that it is almost customary for roasties joints in Hong Kong to make self proclaim that they ARE the masters of their trade: everyone seems feeling so at ease and blushless to put up accolade " the roastie specialist" right behind their names. Wing Hub Lung is no exception to this cocky ethnicity -- while a good many others need to be abdicated for the sins of their swagger -- Wing Hub Lung might just be accurate. All their roasties are sound, with xiu yuk in particular, which is roasted very painstakingly and old-fashionly in oven with charcoals (99% of roasties stores in Hong Kong have gone hi-tech these days because of cost issue and the government's stringent hygiene controls). Because of this, these barbecued pigs are regarded by many foodies to be the among the best in town. The skin is stunning crispy and the pork scrumptious. No side dish is needed, every xiu yuk cognoscenti in town will tell you the best way to enjoy it is to pair it with a bowl of steamed rice.
Or to taste more in one sitting, order it together with their soy sauced chicken. Garnished with a full ladle of spring onions, this combo of roasties is really hard to beat. The sauced skin is dingy with the soy flavor and the meat velvety, another victorious demonstration of the chef’s perfect timing in cooking. Of course, if you still got room for more, the roasted pig suckling would be a brainy choice.
